350g carrot – stripped and ground
350g crude beetroot – stripped and ground
2 shallots – cut finely
2 tsp cumin seeds
2 tbsp olive oil
1 tbsp red wine vinegar
Small bunch of parsley – slashed up
20g Pumpkin seeds – toasted
Combine the ground vegetables.
Warmth the cumin seeds for 2-3 mins and blend through the vegetables
Combine the oil vinegar and parsley – pour over the veg and throw to marinade – top with the toasted seeds.
This serving of mixed greens is an ideal grill side, splendid and invigorating !
