GLUTEN FREE THAI TURKEY BURGERS WITH RAINBOW SLAW

Patch up burger night with these sans gluten Thai-spiced turkey patties.It’s the ideal after-work formula when you have to whizz up supper in a short time or less

Fixings

For the turkey patties

1 banana shallot

1 lemongrass tail, finely hacked

1 tbsp finely ground new ginger

2 garlic cloves, squashed

1 red stew, finely cleaved

1 lime, zested

15g coriander, finely hacked

14g new mint, finely hacked

½ tbsp delicate light earthy colored sugar

1 tbsp fish sauce

500g 7% fat turkey thigh mince

½ tbsp vegetable oil

For the rainbow slaw

1 medium courgette

1 huge carrot, stripped

½ Chinese leaf cabbage, finely destroyed

1 lime, squeezed

1 tbsp rice vinegar

1 tbsp tamari without gluten soy sauce

1 tbsp sesame oil

2 spring onions, finely cut

15g chives, finely hacked

For the satay sauce

100g smooth nutty spread

1 tbsp tamari without gluten soy sauce

1 lime, squeezed

½ tsp ground new ginger

To serve

2 tbsp broiled unsalted peanuts, generally cleaved

1 lime, hacked into wedges

Preheat the stove to 200°C/fan 180°C/gas mark 4. Spot the shallot, lemongrass, ginger, garlic, stew, lime zing, coriander, mint, sugar and fish sauce in a little food processor and barrage until finely cleaved. Blend in with the turkey mince and shape into 4 patties.

Spiralize the courgette and carrot on the best setting and blend in with the Chinese cabbage, lime juice, rice vinegar, soy sauce, sesame oil, spring onions and chives.

Warmth the oil in a wide non-stick griddle and fry the burgers for 3-4 minutes on each side, until brilliant earthy colored. Spot on a plate in the stove for 8-10 minutes, until totally cooked through.

Then, consolidate the elements for the satay sauce with 150ml warm water, until it has a smooth enough consistency for plunging and pouring.

Gap the slaw and burgers between 4 plates, at that point shower over the satay sauce and present with the slashed peanuts and lime wedges.
