Slow cooker bean stew con carne

Use whichever beans you have in the pantry for this luxuriously spiced hamburger and chipotle moderate cooker stew. It’s an ideal feast to get ready for occupied weeknights

Fixings

3 tbsp olive oil

500g meat mince

1 onion , finely cleaved

1 celery stick , finely cleaved

1 huge red pepper , thickly cut

2 garlic cloves , finely ground

2 tsp ground cumin

1 tsp smoked paprika

2 tsp dried oregano

2-3 tbsp chipotle stew glue

3 tbsp tomato purée

400g can cleaved tomatoes

400ml meat stock

2 x 400g can dark beans , depleted

4 little squares dull chocolate

tortilla chips or cooked rice and soured cream, to serve

Strategy

Stage 1

Set the moderate cooker to low. Warmth 1½ tbsp oil in a huge, non-stick dish over a high warmth and fry the mince for 10-12 mins or until equitably sautéed. Tip into the moderate cooker.

Stage 2

Warmth the rest of the oil in the container. Fry the onion, celery and pepper for 10 mins or until mollified. Include the garlic, cumin and paprika and fry for 1 min. Tip into the moderate cooker. 3 Stir in the oregano, chipotle glue, tomato purée, tomatoes and stock. Season. Spread and cook for 6-8 hrs.

Mix in the oregano, chipotle glue, tomato purée, tomatoes and stock. Season. Spread and cook for 6-8 hrs.

Stage 4

Mix in the beans and chocolate during the last 30 mins of cooking. Present with a bowl of rice or tortilla chips and a touch of soured cream.
